Creamy Cauliflower featuring Wildtree's Absolutely Onion Blend - 20 minutes

Yep, same photo as the shredded BBQ vension, but this one is focusing on that yummy pile of white and yellow stuff - cheesy, creamy cauliflower! I confess, I intended to make "mashed" cauliflower instead of mashed potatoes. This is not that recipe as I failed. :) Thankfully, I stumbled onto another good recipe. Next time I will cook the cauliflower much longer and use the food processor instead of my electric beater. Even in a big bowl, using the electric  beater made an absolute MESS all over my clean kitchen, go figure, right? I am blessed because my girls love cauliflower over every other vegetable. Time to find healthy and interesting recipes for cauliflower!

Ingredients:
1 lg. bag  frozen cauliflower
1 TBSP Wildtree Absolutely Onion blend
2 TBSP  cream cheese
1/4 c. sour cream
Optional: 1/2 c. shredded cheese

Cook cauliflower 6 minutes longer than recommended on the package. The softer the better. Finely chop cooked cauliflower in food processor. In a bowl, combine chopped cauliflower, Wildtree Absolutely Onion blend, cream cheese and sour cream. Stir until mixed. Return to sauce pan or microwave safe bowl and  reheat about 5 minutes until sauce is smooth and heated through. Optional: Top with shredded cheese

Serves 4-6

Shredded Venison, BBQ's featuring Wildtree's Sloppy Joe Seasoning

Got venison? Not a fan of the wild game taste or perhaps looking for creative usages for the rather dry roasts? I did a little freestyle cooking again this weekend and found another kid-pleasing recipe and my venison was flavorful, no wild game taste and juicy! I have to preface this to say, I used the slow cooker for 8 hours the day before to cook and then shred the meat. However this recipe would work great as a leftover recycle or if you have a weekend and some time ~ start from the beginning! Sure, I could have dumped straight BBQ sauce into the shredded meat, but I found it more fun to experiment with my Wildtree staples to see what would happen! Your sure can use standard beef roast instead of vension.

Shredded Venison Roast (basic recipe) / 8 1/2 hours:
1 venison roast
1 package dry beef or onion soup/dip mix
8 cups water

-- allow roast to "rest" at room temperature for 30 minutes before cooking; resting allows the enzymes in the meat to relax (after being chilled) and contributes to meat that is so much more tender
-- Place roast in crock pot; mix soup mix with 4 c. water and pour over roast; add additional 4 c. water or until roast is covered.
-- 7 1/2 to 8 hours on low
-- turn off crock pot, remove lid, let sit for 20-30 minutes
-- shred meat with forks

BBQ Shredded Venison - 15 minutes
2 c. shredded venison
3 tsp. Wildtree Sloppy Joe seasoning
3 TBSP yellow mustard
3 TBSP BBQ sauce
1/2 c. water

Combine all ingredients in a small pot, simmer uncovered on medium-low for 10-15 minutes, stirring occasionally. Serve hot and enjoy.

Pizza Casserole, featuring Wildtree's Pizza Sauce Seasoning - 40 minutes




My 8 and 10 year old daughters love pizza. We live in a small town without a pizza delivery option and I don't stock frozen pizzas in the freezer. So what to do when the kids are craving pizza ~ as my friend Jenny calls it, a little free style cooking and ta-da, pizza casserole is on the table. Now, as a single mom, working a full time job with a 20 minute drive home, there isn't a lot of time at night to spend slaving away in the kitchen. Little voices asking what's for dinner and when are we eating means I need to find something fast and yummy. My toughest critic and experimental limiter? A finicky 8 year old who will meticulously pick out tiny bits of onion, tomato and whatever else she decides isn't worthy of her palate. Using healthy Wildtree products allows me to make sauces, blends and seasoning mixes in minutes, jazzing up and flavoring meals with little effort. The best part, Wildtree is all natural USDA certified organic without unpronounceable additives and preservatives!



Ingredients

1 TBSP Wildtree Pizza Sauce Seasoning
2 8 oz. cans tomato sauce
16 oz. uncooked Rotini or similar pasta
1 pkg. mini pepperoni
1/2 c. Parmesan cheese
1 c. shredded pizza cheese blend or mozerella

Preheat oven to 350
Combine 1 TBSP Wildtree pizza sauce seasoning and tomato sauce and set aside
Cook pasta until tender, drain
Return pasta to pot, stir in pizza sauce, Parmesan cheese and 1/2 c. mini pepperonis
Pour mixture into 2 qt. or 11x7 greased baking dish
Layer shredded cheese over the top, add a few more pepperonis

Bake 20 minutes or until cheese is bubbly.
Serves 4-6

Southwestern Cheesy Noodle Casserole with Venison Ring Bologna

I have struggled to find a reasonably edible recipe for venison ring bologna. Generally a drier ring bologna, it's difficult to eat plain and better when it's added to a hot dish. This super easy, speedy skillet meal even won over my finicky 8 year old! Enjoy!

Prep and Cook time: 45 minutes
Servings: 4-6

2 cups pre-cooked venison ring bologna, sliced and quartered
1 1/2 cups mild salsa
1 1/2 cups water
1 1/2 cups uncooked rotini pasta (5-8oz)
8 oz Velveeta, cut into cubes (1 cup)

1. In a 12 inch skillet over medium heat, combine water and salsa. Heat to boiling. Stir in pasta. Add venison bologna. Cover and cook over medium heat 12-15 minutes, stirring occasionally until pasta is tender.

2. Stir in cheese until melted.
